Thai Peanut Noodle Salad

Ingredients 

Salad:
1/4 cup green onions
1/4 cup coriander 
1/4 cup peanuts
1/2 cup carrot sliced
1 mango chopped
1 large red bell pepper sliced
2 cups red cabbage sliced
2 cups romaine lettuce sliced
Pad Thai rice noodles

Peanut dressing:
1/3 cup smooth peanut butter
3 tablespoons lime juice
3 tablespoons water
3 tablespoons coconut
4 teaspoons rice wine vinegar
4 teaspoons soy sauce
1 teaspoon sesame oil
1/4 teaspoon fish sauce
1/2 teaspoon chili paste
1/2 teaspoon minced ginger
1/2 teaspoon minced garlic

Instructions

Boil water in pan

Add rice noodles, stirring occasionally, and cook until tender, about 5 minutes.

Drain and rinse with cool water until noodles are cold. If noodles stick together, rinse them in cool water to separate.

Put a large serving bowl nearby and add each salad element to the bowling mix

In a separate small bowl, whisk together peanut dressing

Add the rice noodles to the bowl with the vegetables, herbs, and peanuts. Pour half of the dressing over the salad.

Garnish salad with additional coriander leaves, green onions, and chopped peanuts.

Serve the remaining dressing on the side.
