Niçoise salad


8 baby new potatoes
2 medium eggs
125g asparagus
1 can tuna ,
1/4 cup of small black olives ,
1 bag of rocket,

For the dressing
1 shallot minced
1 tsp English mustard powder
2 tbsp white wine vinegar
1 tbsp extra-virgin olive oil


Boil some water and add the baby new potatoes for 8mins and then drain

Put the eggs in a pan of cold water and bring to the boil.

As soon as the water is boiling, add the asparagus for 2 mins.

Drain well and rinse everything under cold water to cool

Once cool enough to handle, peel the eggs and halve or quarter.

Whisk the dressing ingredients

Tip the potatoes, asparagus, tuna, olives and rocket into a bowl.

Drizzle over the dressing and toss well to coat, then add the eggs.
