Gucaegg Breakfast Bowl
*1 cup baby spinach leaves
*⅛ red onion - sliced
*1 small piece gf toast - chopped into chunks
*1 tbsp sour cream *Pinch black pepper
*1 ripe avocado - peeled, de-stoned and roughly chopped
*⅛ red onion - minced
*1 tbsp chopped coriander *Pinch of salt
*Pinch of pepper
*Half a lime of juice
*1/2 ripe tomato, minced
Place the egg in a pan of cold water, bring to the boil, then simmer for 5-6 minutes.
Turn off the heat and drain off the water.
Leave the egg too cool.
Peel the egg and slice in half.
Score the inside of the avocado with a blunt knife and scoop out the flesh with a spoon. Using a fork, roughly mash the avocado. (Don't overdo it! The guacamole should be a little chunky.) Sprinkle with salt and lime. Add the chopped onion, coriander, black pepper, and tomato (Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste.)
Place the spinach in a bowl, top with the guacamole, egg, slices of red onion, cubes of toast, a blob of sour cream, a drizzle of sweet chilli sauce and a sprinkle of pepper, then serve.
