Buffalo Jacket Potato


Sweet potato
Jackfruit (pulled) (you can use chicken if you are not a vegan/vegetarian
Franks hot sauce

Sugar free mayo
1/2 cup Red cabbage sliced
 1/2 cup Carrots thinly sliced
1/2 cup Onion thinly sliced
1 table spoon Paprika
Dill minced
Chives minced
 Lemon juice - fresh
Dijon mustard
 Salt & pepper


*Wash sweet potato, place in foil and put in oven for over an hour.
*tip if you want to speed things up stick a fork in the potato side ways, will cook the inside of the potato a lot quicker.*
 In a bowl mix together jackfruit and franks hot sauce
In a separate bowl mix together the mayo, paprika, lemon juice, Dijon mustard, chives, dill, salt and pepper.
After mixing your dressing add the red cabbage, carrots & onion
Take potato out of oven and slice down middle, placing your pulled jackfruit on top
 Place coleslaw on side and serve
